LOOK FOR: Slightly firm fruit with fuzzy skin. When fully ripe, kiwi fruit should yield to gentle pressure on the skin.

TO STORE: Firm, unwashed kiwi fruit may be stored by itself in a plastic bag in the refrigerator for several months. Ripen kiwi fruit at room temperature; refrigerate after ripening and use within 1 to 2 days.

TO PREPARE: With a sharp knife, peel off skin; cut in wedges or slices. Or cut unpeeled fruit lengthwise in half to be eaten with a spoon.
